Our kaiseki cuisine focuses on fresh seafood delivered directly from the nearby Kumano Sea, powerful seafood that is firmly rooted in the fertile land, and locally sourced ingredients.
Kumano Kaiseki
A healthy menu using local ingredients, with a focus on health, including traditional Japanese ingredients such as ``beans, sesame seeds, wakame (seaweed), vegetables, fish, shiitake mushrooms, and potatoes'' and Mediterranean style ``olive oil, vegetables, and fresh ingredients''. Contains seafood, herbs, and grains. In addition, we use low-temperature cooking and stews to make the most of the ingredients, making our dishes gentle on the body.

There is a legend of Jofuku that has been passed down in Kumano City, Mie Prefecture.
China: Approximately 2,200 years ago, a man named Xu Fu landed in Kumano City on the orders of Qin Shihuang to search for an elixir of immortality. It is said that the herbal medicine was Ashitaba. Ashitaba is rich in vitamins, minerals, and dietary fiber, and is so well-balanced that it is called the king of vegetables. In honor of the legend of Jofuku, the kaiseki is a gorgeous kaiseki dish that even the First Emperor would be happy to include, including Asuka leaves, spiny lobster, abalone, Matsusaka beef, and fresh fish caught near the Kumano Sea.
